I began working with mosaic art after my retirement. Creating mosaics has become a form of therapy for me, bringing years of great satisfaction.

For this piece, I chose to represent the plantain tree. The mosaic is made with colored glass in different shades of green, along with blue and brown sand. In Puerto Rico, plantains are a staple of our cuisine and are prepared in many ways—such as in mofongo (fried, mashed plantains), soups, and as ripe, sweet plantains. Mofongo is especially popular among locals and tourists alike. It’s made by mashing fried plantains with salt, garlic, and olive oil, and is often served with meat, seafood, or chicken broth. Many tourists who visit our island say, “I want to try mofongo!” Plantain farming is important to the island’s economy. So when you visit Puerto Rico, don’t forget to try mofongo—it’s a delicious and iconic side dish.
